CHEMICAL KINETICS: THE ACID-CATALYZED HYDROLYSIS OF SUCROSE

Objective:
Chemical Kinetics involves the determination of velocity or rate of a chemical reaction. The rate reaction depends on the nature of the reactants , the concentration of the reactants, the temperature, and the presence of a catalyst. The concentration of species on the reaction rate are summarized by an equation called the Rate Law for the reaction. Effect of temperature on the reaction rate leads to the energy required for a reaction. Also to determine the rate law, it should be done experimentally. We timed the reaction carefully from the moment the two solutions were mixed. After 1minute of the reaction has lapsed, we pipet 2.00mL aliquot of the reaction mixture into test tube 1. The NaOH stops the reaction. We then made sure that the solution is fully mixed. Procedure was repeated for the rest of the tubes at the end of 2,4,6,8,10,12,15 and 20 minutes total reaction time. The concentration of Sucrose in solution at various stages of the reaction was determined indirectly. First, we measured the concentration of fructose and glucose formed spectrophotometrically by reacting them with 3,5-dinitrosalicylate reagent (3,5-DNS). Both sugars reacted with the reagent to form a colored product that absorbed strongly at 540nm. The absorbance of the solution was measured and the concentration of fructose and glucose was determined from Beer’s Law (A=elc). The value of el for the product was 1200L/mol, which was used for our calculations. The concentration of glucose + sucrose that was measured in the Beer’s Law experiment was then used to calculate the concentration of glucose + fructose formed in our reaction.
